Mamy Therese offers exquisite madeleines, those little sponge cakes lovingly referred to so fondly by Proust, and with this being the only madeleinerie in Paris, they’ve become quite a talking point in the district. Prepared in house every day and best enjoyed just after leaving the oven, these old time delights await your rediscovery. Here you can choose from traditional and mellow for the classics, including mirabelle and bergamot, citrus, lemon or orange, chocolate or even coffee, as well as much more unexpected versions such as Perl de Paulmier, with lemon, liquorice, and poppy; Idylle, with pistachio and cherry fondant; or Rouge et Noir, flavoured by mint, blackberry, yuzu and raspberry fondant. In this first Parisian madeleinerie there is above all a story of memories, the passing down of traditions and a desire to reconnect with forgotten tastes and scents, just as in Proust. Jacques Mercier, who has never forgotten the taste of the madeleines prepared by his grandmother, today shares this recipe with Benoît Molin, a renowned pastry chef, who also became enchanted by the pâtisserie when he was little.
