Botanique, the new eatery close to the Hotel Fabric

In a small and rather atypical pavilion just along the street from the Hotel Fabric, a new restaurant has just opened; the Botanique. The fruits of a meeting between the chef Sugio Yamaguchi, formerly of the kitchens of Pierre Sang Boyer, Nicolas Le Bec and Georges Blanc, and the sommelier Philippe Alexandre, this new restaurant is winning all the laurels. Perfectly marrying a main course and wine, both of these nature lovers have signed an agreement to provide unique flavour combinations and overall harmony. In the completely open kitchen you’ll find being prepared, according to season, avocado shrimp tartes with passion fruit, and beef tartare with green olives and a chequerboard of roasted vegetables, or even goujonnettes of sole-courgettes-lemon. There’s a secret garden seen only from the ground floor dining area, and a basement with bottles galore on its shelves. More secluded, the 1st floor reveals another treasure: a canopy which offers the Paris sky. With such unusual surroundings and two dynamic individuals passionately devoted to fine food and drink, Botanique will prove hard to resist.  JR.
